Spill Wine Maleny -our first Wine Bar
Spill Wine is about to bring a new, interesting and sophisticated option to food and wine lovers in Maleny.
To find out what’s coming, we sat down with owners, Clare Hutton and Jamie Fleming over coffee at Maleny Marketplace.
The first thing we wanted to know was “why Maleny?”
Clare said her mother has been living up here for the past ten years. “We are regulars here now that Mums here and we have come to love the place” she said. “We saw a gap in the market up here and knew we had the skills to fill it”.
Combining Experience and Passion
It was immediately obvious that this is a passion project for two very knowledgeable and successful operators.
Jamie says that they are drawing heavily on experience and connections forged from more than 20 years in the industry.
As owners of Brisbane’s award-winning Alba Bar & Deli, the plan is to bring an all new experience in food and wine to the Hinterland.
Like Alba, all food served at Spill Wine will be made in-house.
Clare said that the menu is not set in stone. It will continually evolve to suit local tastes and the seasons. But, we will serve our award-winning Pate’ Taureans, and Charcuterie Boards made with seasonal ingredients sourced from producers in this abundant local food bowl.
Jamie is working with their experienced builders on the design and fit out of Spill Wine. He is also currently finalizing the wine selection that will fill their Wall of Wine with hundreds of handpicked bottles.
Local. International, Traditional and Unusual
He is keen to support Queensland and Australian wine makers. But will have a varied selection of quality wines from around the World as well.
“You can expect a combination of traditional styles, as well as a lot of surprises from the many lesser known Winemakers”. Whilst acknowledging that reputations of established winemakers are hard-earned, Jaimie said that reputation is not everything though.
“Good Wine is Good Wine wherever it comes from.” I know what I like and we will be bringing a selection of wines like nothing that has been seen here before.”
Along with Jamie, Clare and their hand-picked team, Spill Wine will be welcoming both guest Chefs and Winemakers with the launch of their chef series.

They will bring chefs and winemakers in from around the country. All collaborating to create incredible evening events. Take the chance to meet and learn from the winemakers in person.
Understanding a wine, as well as the winemaker’s process, and getting that knowledge from the experts takes the enjoyment of wine to a whole other level.
Given the buzz around town already for this exciting new venture we asked if they will be taking bookings only or will walk-ins be welcomed?
Clare said that, “as a boutique wine bar, the last thing we want is for people to take the time to drive up the mountain to visit us and find they can’t get a seat”. (so) “to avoid any disappointment we may be asking everyone to book ahead on the more popular nights and times of year, but we’ll play it by ear.”
Let Spill Wine do the hard work for You
Spill Wine is brilliant for those of us who love a nice wine when we taste it, but really don’t have the experience or knowledge to create the perfect Cellar. To this end, Jamie and Clare will happily share their expertise and help us to build our own bespoke home cellar. catering to our palate, our food preferences and of course our friend’s taste!
Those more knowledgeable about wine will find kindred spirits in Jamie and Clare. Come and refine your tastes with the knowledge and experience of visiting winemakers.

Hoping for February Start
Update:
Spill Wine did not quiet make the intended late February start date, but did Open in March. Judging by the customer numbers each day, it seems the opportunity to sit, taste, learn about and buy hand-picked quality wines is a welcome addition in town.
“It’s about going out and finding the small and independent producers most of us would never hear of”. Jamie says “Let us do the hard work so you can just enjoy the wine. Navigating the world of wine can be overwhelming. So we are keen to take the hard work out, get to know people’s taste in the community and find the gems from around the world.”
Considering the sophisticated venue this couple have planned, they couldn’t be more down to earth and lovely. They clearly are the right mix of experience, knowledge, passion and fun,

Spill Wine Bar will be open from 10am till 10pm Wednesday through Sunday at Shop 5 / 45 Maple Street Maleny.
